The breakfast obsession continues! And this time I have, incorporated using your ripe bananas into breakfast!! Which, in case you have forgotten, is by far my favorite meal of the day.

These pancakes are also wheat and grain free, and no added sugar, butter, or oil! Very tasty on their own, but topped with cream cheese frosting they take your usual boring breakfast to extraordinary!

I don’t know about you, but I am obsessed with pancakes and waffles.  I love to get creative with them, with “wild” flavors and toppings, to make breakfast exciting and tasty, and most importantly, HEALTHY!

I see lots of recipes all over for gluten free protein pancakes, and these are the brainchild of a ton of experimentation to create the absolute best!

Banana Protein Pancakes

Ingredients:

  • 1 medium sized, over ripe banana, mashed (mine was 118 g if you are counting macros)
  • 1 Large Egg
  • 1 scoop Vanilla Protein Powder (I used Quest Vanilla Milkshake)
  • 1/2 tsp Baking Powder
  • Cinnamon, sprinkle to taste
  • 1 TBSP Unsweetened Almond Milk (Optional – only if needed)

 

Directions:

  • Combine all ingredients in a small bowl and whisk together. Cook on a heated griddle or skillet lightly sprayed with cooking spray on low heat for 5 minutes per side.

Cream Cheese Topping

Ingredients:

  • 2 TBSP Fat Free Cream Cheese (Spreadable Variety)
  • 1 TBSP Plain, Fat Free Greek Yogurt
  • Vanilla (Drops)
  • Sweetener, to taste

Directions:

Mix together in a very small dish, just  to combine and add in between layers, and to top, of pancakes. Enjoy!!
